Castlemine Farm - Dry aged fillet steak
Dry aged on the bone. The most tender cut of them all. Our fillet steak is melt-in-the-mouth and has the added bonus of being a low fat cut.

Take the steak out of the fridge a minimum of 15 minutes before cooking. This allows the meat to warm slightly and the fibres to relax and expand. Season the steak with sea salt & black pepper to taste, place the steak into the pan & cook to your liking.
When your steak is cooked, take it from the pan & place on a warmed plate, allowing the steak to rest for about 4 minutes. Resting allows the fibres of the meat to relax, juices to settle & significantly improves the eating experience.
With your fillet, try red burgundy, Pinot Noir or a modern Italian red.
About Castlemine Farm
Castlemine Farm has a long and rich heritage located in the heart of Roscommon. The Allen family have farmed the land since the 1820's when Castlemine Farm was in the hands of Walter (Wally) Allen. The farm was passed down through the generations and Sean Allen took over in the 1950’s and has been farming the land ever since.
He was always of the opinion that the grass fed to animals gives a sweeter taste especially in limestone regions such as Roscommon. The farm has now passed to the next generation and is now run by Sean’s sons Derek and Brendan Allen.
